Here is how the Caja China works:
Once the charcoal is lit and has greyed (about 15 minutes) the meat is layed inside the China Box and sandwiched between two stainless steel racks. The meat cooks from the heat radiating down from the heat source (usually either charcoal or wood). The fact that the charcoal goes on top allows the Caja China to function as a huge oven, containing all the tenderness and juicyness that baking provides, while cutting cooking times in half or more compared to other roasting styles. A hog roast will usually take approximately four hours, and requires that the pig be flipped once the temperature has reached about 185 degrees. This is done so that the skin can blister and become crispy. No other cooking style provides crispy skin like a Caja China! Once the pig is cooked, allow about 30 minutes for it to cool before carving. What are the dimensions of this roaster, and how big of a pig can I cook in it?
This is our 100 lb "Caja Asadora" or Roasting Box, which measures 48 x 24 x 24" and will roast up to a 100 live pig, lamb, or goat.
How long will it take to arrive after I order it?

Does the box ship assembled?
With the exception of the La Caja China SP-150 and SP-300 models, your new Caja China comes unassembled and requires basic assembly, which usually takes about 30 minutes. Full instructions are included.
How much charcoal do I need to roast a whole pig?
You will typically need approximately 2 1/2 16 lb. bags. It is always better to have a little extra than not enough!
How do I clean my roaster after using it?
We recommend spraying all metal areas with degreaser and rinsing with soap and water. Allow to dry.

We used the roaster for the first time yesterday to roast a pig. While we liked it very much and had a great neighborhood party, we are disappointed to see that the charcoal grate warped badly from the heat I suppose. We will have to put fire bricks in each corner to try and hold it down. Has anyone else had this problem?

I tested this a few days after purchasing it and it worked better than I could have hoped. There was a shipping issue, however Latin Touch customer service took care of it right away! I look forward to many more meals cooked with the roaster.

We roasted our first pig and it worked great. Product is good. Built well. What you'd expect for the price. I recommend it. Makes for a great social event.

I've done a lot of researching before buying this roaster. After deciding that this, LA Caja China was the one fore. I called Latin Touch and they were very helpful with me making my decision final. They answered all my questions and also gave me good advice. My first roasted pig was.....a HUGH SUCCESS!! It came out perfect! Mouth watering ,tender and very juicy!!! I was the envy of all. I HIGHLY recommend Latin Touch as the place for all your roasting needs. They have found a permanent customer in me. Specialthanks to Matthew! I wish I could upload a picture so you can see the spectacular results.

So after a lot of thought in regards to which pig roaster to buy I had to consider alot of factors and decided that Lechon style with the Caja Asadora would be the besst option. Took a week to get and was a little short on the assembly instructions but with a little thought anybody should be able to figure it out. I had already reserved a 50 pound pig and my partners in crime jumped into action to promptly throw a fathers day Luau/PIG ROAST. The product performed very well and was easy to use. All the reviews advised to follow the directions on the side of the box to the T. I didn't want to risk ruining the pig so i bought a meat thermometer which ended up being a waste of time. At the crucial point of deciding to trust the thermometer or the guidelines on the box i chose the box and was very pleased with the outcome along with the guest.

I have not had a chance to use the Caja Asadora but I did assemble it and it looks great. The roaster is well built and seems very solid. I had a few questions before purchasing the product and their customer service is outstanding. Anything else I need for this cooker I will definitely order through Latin Touch.
