Roast Chicken (courtesy of Anny's Blog)
We found this recipe online, tried it, and it is awesome! Anny cooked 12 chickens at once using her La Caja China for this recipe. You can adjust the amount of seasoning you use to your liking. Also, adding salt and pepper is optional, and can be done to taste.
BBQ Rub:
1/2 cup Cajun seasoning
1/4 cup paprika
1/4 cup brown sugar
1/3 cup mustard powder
1/4 cup chili powder
1/4 cup ground cumin
2 Tbs ground black pepper
2 Tbs garlic powder
Mix all ingredients together.
Sprinkle the seasoning to taste over the both sides of the chicken.
For enhanced flavor, wrap and refrigerate the chicken overnight.
Another great idea is to line the drip tray with vegetables so that they cook in the juices that fall from the chicken during cooking!
Follow the same cooking instructions as you would for other types of meat until the chickens have been roasting for one hour.
At that point, flip the chickens over and allow to cook for another 40-50 minutes until completely cooked.
Time to ring the dinner bell!
